It will come as no surprise to those who know me that I love making pasta salads in the summer. Pasta salads are simple, yet intricate, flavorful, loaded with herbs, fruits and vegetables, and are a fantastic companion to anything we throw on the grill. Also as we try to eat lighter in the summer, pasta salads can make a fantastic meal all on their own. Last night I made a Bruschetta with Whole Wheat Pasta dish.
One of the reasons I chose to make this dish now is to show how it is prepared with store-bought items. However, later on in the summer, I look forward to showing how I make the dish using vegetables and herbs from my very own garden. Even though they are all the same components, it truly does make a significant difference in the explosion of flavor to use fresh, just-off-the-vine ingredients.
You may be asking - where is the recipe? Quite honestly, putting together pasta salads should be less about measuring cups and measuring spoons and more about tasting, tweaking, adding and making it your own. I recommend surfing through a couple recipes on the internet to get some ideas of ingredients and then making a salad which includes all of your favorite flavors.
